Despite the protests against the force-feeding of the vegan movement and its ban in official receptions in several ecological cities, foie gras is still one of the essentials of the end of the year celebrations, it represents 80% of consumption in France.

Between serial epidemics which limit French production, the closure of restaurants during the health crisis and countries that have become reluctant to consume it, foie gras finds fewer international outlets.
