According to their own words, Els and Dick van der Horst from De Hoef can “earn a well-stocked sandwich”. They have been farming organically for decades and have thirty dairy cows and some young stock. “But we can’t do it with the dairy cows alone,” says Els clearly. “Early on in our marriage, we knew we needed more money. Keeping more animals didn’t feel right, so we came up with other sources of income: a shop, a vegetable garden, a tea house and especially our organic cheese factory.”
