Josefine Pagander from Gerlesborg on the west coast is pastry chef of the year 2022. The theme this year was “idols” and she baked inspired by the role model Carl von Linné.

The 24-year-old swung together, among other things, a cake with green apple, pumpkin seeds and dulce on the theme.

“With many advanced techniques and a courage that fascinated the jury, sober and beautiful pastries have been created. Tasting them is a pure pleasure,” writes the jury in its justification.

With the victory, Josefine Pagander, who works as a freelance pastry chef and lives in Fjällbacka, also becomes Swedish champion for professional pastry chefs.

“This feels absolutely fantastic!” she says in a press release.

“I think that my unified concept and my certainty of taste took me all the way to the gold. The theme of idols was fun to interpret and it feels good to be able to introduce Linnaeus and what my grandfather taught in my pastries.”

Andreas Modd in Uppsala and Guillaume Vilallonga from Stockholm took second and third place respectively.

The competition lasted for ten hours spread over two days at the Stockholm Fair. Each pastry chef created four cakes, ten ice cream cakes, six chocolate cakes and sixteen desserts each.
