To the happiness of the boui bouis elsewhere here like there

From east to west, from north to south, taste the world in Paris, at low prices and great treats, from boui-boui to boui-boui! The boui-boui is the incarnation of the elsewhere here, a kitchen from the corner of the street, without fuss, simple, good, popular and family, rooted, seasoned with the culture of those who make it.

A comforting, sincere cuisine, of a shared home, home cooking, intimate reflections of cooks whose job has not always been to be in the kitchen, but for whom cooking has proven to be the best way to reinvent themselves, and share.

The first time, I go there alone so as not to let myself be disturbed, to be entirely in the feeling, the observation. As when traveling, you meet many more people when you are solo rather than accompanied. On the other hand, I love to share, and I do not deprive myself of it! » Chloe Vasselin.

Refuge restaurants, landmarks for the diasporas and for the restaurateurs themselves, and where the stories of great history are told, those of the different migrations since the industrial revolution. The boui-bouis are undoubtedly a reflection of Paris, a world city.

RECIPE

Indian cauliflower curry

Recipe from Chloe Vasselin’s blog

  • Preparation : 5 minutes
  • Cooking : 20 mins
  • EASY

Ingredients

1 cauliflower/ 2 medium potatoes/ 2-3 tomatoes/ 1 onion/ 2 garlic cloves/ 1 heaped teaspoon of ginger paste/ 7 or 8 black peppercorns/ 1 heaped teaspoon of seeds cumin/ 1 teaspoon coriander powder/ 1 teaspoon turmeric powder/ 1 teaspoon chilli powder or 1 chopped bird’s eye chili/ 2 tablespoons vegetable oil/ A few fresh coriander leaves/ Salt

Recipe :

  • Cut the potatoes into bite-size pieces and the cauliflower a little larger, so that it doesn’t disintegrate during cooking and remains in pieces.
  • In a large saucepan, heat the cauliflower and potatoes in hot water for 10 minutes. Take them out and drain them.
  • Cut the onion, crush the garlic and chop the coriander.
  • Heat a skillet with two tablespoons of vegetable oil. Add the cumin seeds and black peppercorns.
  • Add the onion and stir until translucent.
  • Add the ginger paste, garlic and chilli, sauté for a minute.
  • Keep the heat low and add the coriander powder, the turmeric and then the tomatoes to the pan. Keep stirring until you get a paste.
  • Gently throw the potatoes and cauliflower pieces into the pan and stir gently so that the batter adheres to the vegetables.
  • Leave on low heat for 5 minutes and sauté the vegetables, stirring occasionally.
  • Add salt and leave for another 3 to 5 minutes, covered.
  • Taste the cauliflower, it should still be a bit crunchy.
  • Arrange the plates with chopped coriander and serve with roti/chapati.
