According to the researchers, one area of use for the new product could be as food aid in famine disasters.
– In places where you don’t get a lot of nutritious food, products like this, which are reasonably cheap, could be an alternative, says Anne Charlotte Bunge, PhD student in sustainability science at the Stockholm Resilience Center at Stockholm University.
“Goes just as well with lentil stew”
In Sweden, according to Bunge, we do not need protein-enriched rice. We already have access to several non-animal protein sources.
– Legumes are the answer to everything, we don’t need to develop anything new. Lentil stew, hummus and falafel have a large proportion of complete protein, says Anne Charlotte Bunge.
