Through his books and successful bakeries, the Frenchman Sébastien Boudet has inspired baking and cooking – with an emphasis on sustainability.
From 2018 to 2021, he ran the Sébastien bakery on Södermalm in Stockholm, but chose – despite business going well – to close the bakery.
– The feeling was that I am sitting with a bakery in the south that is doing well and rolling, but it felt like playing music while the Titanic was sinking, says Boudet.
With his new cookbook, he wants to continue to inspire to think more sustainably about cooking, and to dare to challenge old traditions about how we consume food.
– With the bakery, I wanted to show that it is possible to run a place with a sustainable focus. You don’t spend your money when you buy organic food – you invest, says Boudet.
