They are rich in magnesium, an anti-fatigue ally.
Like every year when temperatures drop, our immunity is compromised and can expose us to seasonal illnesses. Colds, flu, sensitive throat… To avoid them, it is possible to strengthen your immune system naturally, in particular through diet. A gold mine, the seeds of an autumn vegetable are particularly good for boosting immunity.
Normally, we throw them in the trash. However, these seeds are particularly rich in omega 3 and omega 6, unsaturated fatty acids, and zinc, nutrients which help strengthen the immune system. They also contain magnesium and potassium. “We are entering a period where we are more tired, so consuming magnesium is a good ideaexplains Anne-Laure Possard, dietician-nutritionist. They also contain very good lipids, because they have very little saturated fat.. These lipids have the particular function of storing energy in the body. And that’s not all, these seeds are also rich in fiber, essential for good digestion, and will increase the proportion of good cholesterol in the body. Finally, they contain good plant proteins, a good way for vegetarians and vegans to increase their protein intake.
These seeds are those of pumpkin, a seasonal squash, the seeds of which can be dried and benefit from their benefits for another 2-3 months. And nothing could be simpler to dry them directly at home. “You have to clean them well first. Then you dry them in a paper towel and put them in an airtight jar”indicates Anne-Laure Possard. You should know that commercially purchased pumpkins will produce white seeds, which are less flavorful than green seeds. The latter can be found in any store and have a sweeter taste, reminiscent of nuts.
Pumpkin seeds can be eaten in many ways. “I put them in cottage cheeses, rather for breakfast or mixed with oatmeal. You can also add them to homemade granola or sprinkle them on a salad”advises the dietitian-nutritionist. It is possible to offer pumpkin seeds as an aperitif, as an alternative to peanuts. They also have a satiating effect and can therefore be nibbled in snack if you like the taste.
It is possible to eat pumpkin seeds every day without problem. There are no contraindications, except in cases of allergy. Our expert advises consuming a handful per day, or a tablespoon, which corresponds to approximately 10 grams.
