Finnish chef Kim Mikkola, who worked at Noma, says that the restaurant has always thought about the future.
Copenhagen-based restaurant Noma will stop operating in its current form at the end of next year, the restaurant says on its website.
The restaurant with three Michelin stars turns into a kind of test kitchen. Opening a pop-up restaurant is possible, Noma says in its press release.
Noma has been selected as the winner of the World’s 50 Best Restaurants list several times. The restaurant was opened in 2003. It already closed its doors once in 2016 and opened again two years later.
Michelin chef Kim Mikkola, who worked at Noma between 2012 and 2017, says that even then there was a lot of talk in the restaurant about what its future could be.
– Certainly many things have influenced the decision, the world situation and the fact that Noma is constantly trying to develop new ways of what gastronomy can be, Mikkola describes.
Mikkola, who worked in management positions at Noma, thinks that Noma is somehow forced to start again, because it has already achieved everything.
