Within a few years, all falu sausage will have a new recipe. This includes, among others, Garant’s, Scans and Stensåkra’s falu sausages, but it is not only sausages that will lose an ingredient.

The decision was taken on August 15, 2024 by the European Commission after Efsa, the European Food Safety Authority, assessed that a substance that is common in, among other things, meat products could be harmful to human health.

It is smoke flavors that are rejected by the commission. These are found in meat, cheese and processed fish products, including crustaceans.

Ingredient disappears – increases the risk of cancer

The flavoring has previously been allowed to be used in these foods but not in others. At the same time, the manufacturers of food containing smoke flavors have continuously applied for approval every ten years.

The aromas are used instead of foods being smoked in the traditional way and give the food a smoky taste.

– Approval has been applied for the aroma for certain specific foods and then an assessment is made of the safety of the aromas in these specific foods, says Maria Florinhead of unit at the unit for drinking water and chemical substances at the Swedish Food Agency, to News24.

In the press release “No to re-approval of smoke flavorings” writes the authority that “smoke flavors can no longer be considered safe to use in food”.

The reason is that most smoke flavorings have been shown to contain substances that are genotoxic, which means that they increase the risk of cancer in the person who consumes it.

It will be a while before the falu sausage gets its new recipe.

Then the recipe for falu sausage – and other meat products – changes

– There are transition periods for smoke flavors in various foods, says Florin at the Swedish Food Agency to Nyheter24.

Since smoke flavorings have previously been approved every ten years, the Swedish Food Agency will simply stop approving the substance. This means that those who have already received approval will be able to use smoke flavorings for the approved period.

Manufacturers have until 1 July 2026 and 1 July 2029 respectively to phase out the smoke flavourings.
