A year later, the Van Schip couple are in a lot better shape. “Also because we know it was the right decision,” says Dick van Schip, who was born above the store. The butcher’s shop had been a household name on Balijelaan since 1957. Many in the Rivierenbuurt and far beyond grew up with the meat of Dick and Hélène. Meat that they prepared themselves from start to finish. “But this way was no longer sustainable for us,” says Dick. “We always wanted to cut the meat ourselves and mix the herbs ourselves. We made 90 percent of what was in the store ourselves. We didn’t want to make any concessions, that was a choice.”
