Bulgur salad with halloumi is a tasty and filling salad that is perfect as a light lunch or as a fresh side dish for dinner. The rich bulgur, the salty halloumi and the sweet pomegranate provide a wonderful combination of flavors and textures.

Ingredients:
2 dl bulgur4 dl water1/2 tsp salt250 g halloumi2 dl parsley, chopped1 pomegranate, pitted1/2 red onion, finely chopped1/2 cup olive oil2 tbsp lemon juicesalt and pepper to tasteInstructions:
Cook the bulgur according to the instructions on the package, add 1/2 teaspoon of salt to the water.Cut the halloumi into thin slices and fry them in a dry frying pan until golden brown on both sides.Mix the cooked bulgur with parsley, pomegranate and red onion in a large bowl.Add the halloumi and mix well.In a separate bowl, mix olive oil and lemon juice, and pour over the salad.Season with salt and pepper to taste.Serve immediately or refrigerate until serving.See more tasty and quick recipes here!
