Bulgur salad with halloumi – simple recipe

Bulgur salad with halloumi is a tasty and filling salad that is perfect as a light lunch or as a fresh side dish for dinner. The rich bulgur, the salty halloumi and the sweet pomegranate provide a wonderful combination of flavors and textures.

Ingredients:

  • 2 dl bulgur
  • 4 dl water
  • 1/2 tsp salt
  • 250 g halloumi
  • 2 dl parsley, chopped
  • 1 pomegranate, pitted
  • 1/2 red onion, finely chopped
  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • salt and pepper to taste
  • Instructions:

  • Cook the bulgur according to the instructions on the package, add 1/2 teaspoon of salt to the water.
  • Cut the halloumi into thin slices and fry them in a dry frying pan until golden brown on both sides.
  • Mix the cooked bulgur with parsley, pomegranate and red onion in a large bowl.
  • Add the halloumi and mix well.
  • In a separate bowl, mix olive oil and lemon juice, and pour over the salad.
  • Season with salt and pepper to taste.
  • Serve immediately or refrigerate until serving.
