In the bins, it stands out for its round and flattened shape compared to other squashes, pumpkins or butternut squashes, with a color that varies from orange to dark green. To prepare the recipe for 4 people, you will need 1/4 pumpkin, about ten lasagna sheets, 2 sticks of celery, 3 cloves of garlic, an onion, a bunch of parsley, 200 grams of grated cheese, 50 centilitres of milk, 100 grams of cornstarch, salt and pepper.

Start by preheating your oven to 200°C, peel and chop the onion, cut the celery and brown everything in a very hot pan greased with oil. Place the pumpkin, which you will cut into small cubes, taking care to remove the skin first. Add it to the mixture. Chop the parsley and mince the garlic then add them to the pan as well. Salt and pepper and cover everything until the water from the pumpkin has evaporated.

Now it’s time to prepare the béchamel. In a bowl, mix the cornstarch with a little milk. In a saucepan, boil the rest of the milk, then reduce the heat and pour in the mixture from the bowl. Mix gently until the mixture thickens. Add salt and pepper. Your béchamel is ready!

In a baking dish, start by lining the bottom with a layer of the squash mixture, then cover with a sheet of lasagna, and finally cover with a layer of béchamel. Repeat this layering before finishing by topping it all with grated cheese. Bake for 45 minutes and it’s ready! Enjoy!
