Rice is the most consumed cereal in Senegal, which imports more than a million tonnes per year. Although it is a source of energy, it has little nutritional value when it is processed and milled. This type of rice is widely consumed in Africa, particularly in Senegal. To fill these deficiencies, it is enriched with micronutrients thanks to fortification.
