Contaminated rice: what is the risk involved?
Aflatoxins are among the most toxic mycotoxins. Produced by several species of fungi of the genus aspergillus, they are the cause of serious diseases in humans.
Ingested regularly, they can cause lesions in the liver (which evolve into cirrhosis), primary cancers of the liver or cancers of the respiratory tract. They are also proven carcinogens for humans.
Fortunately, acute poisoning due to aflatoxins remains rare. After ingesting a product contaminated with aflatoxins, various symptoms may appear – such as diarrhoea, vomiting or weight loss. In this case, a medical consultation is recommended.
