We like it with plain, smoked, pepper or truffle cheese… And of course always accompanied by hot potatoes, charcuterie and white wine. This winter delight is, of course, raclette! Except that this mountain dish, although it is delicious, also harms our digestive system. Explanations.
Avoid accumulating discrepancies
First advice in case of improvised raclette: avoid having fun on the sacrosanct starter-main course-dessert.
“For example, it is better not to combine raclette, alcohol and chocolate cake for dessert. Then you have to dose: take 5/6 slices of cheese on your plate and stop there. This apparently simple gesture makes it possible to quantify what we consume“, specifies Alexandra Murcier.
Then, not having too heavy a hand on alcohol can be wise “because alcohol dehydrates“recalls the expert. We will therefore ensure that we are well hydrated (in water) throughout the meal.
As for the charcuterie that accompanies the raclette, often very salty (cooked ham, Bayonne ham, rolled breast, rosette, bacon, etc.), it should be consumed sparingly.
“I recommend eating meat from Graubünden, which is very high in protein and low in salt. You can also treat yourself with white ham, which contains little fat and a lot of protein.“, indicates the dietician-nutritionist.
Vary the pleasures… by betting on vegetables
As an accompaniment to your raclette cheese, do you always bet on potatoes? Bad idea. Admittedly, if the combination of potatoes and melted cheese no longer has to prove itself, it is quite possible to offer a vegetable-starch mix on the table.
“Raclette works very well with mushrooms; and you can even prepare a small green salad on the side, in addition“, recommends the expert, before adding “that you must not forget to eat slowly, chew and of course to ask yourself if you are still hungry before refilling.”
