Raclette and tartiflette 5 tips from a nutritionist to lighten

Long winter evenings give you cravings for tartiflette or raclette? But the consequences on the line or health are not trivial. However, by following a few rules, we can reduce the caloric addition. How? ‘Or’ What ? Answer with Corinne Fernandez, dietician-nutritionist in Paris.

What could be more convivial than these meals shared with friends after a day in the mountains, or more simply after tiring hours of work. In the ranking of the winter meals most appreciated by the French, tartiflette and raclette occupy a prominent place. The main problem lies in their high calorie content.

On the same subject

Indeed, these winter essentials consist of cheese, potatoes, cold meats, and therefore foods high in fat and sugar. Not to mention that they are often accompanied by alcohol. However, they have a convivial connotation, and it is sometimes difficult to do without them by removing them altogether. So is it possible to include them in your menus without creating too much damage on your figure?

Leaner cold cuts

“Yes if we follow certain rules“, affirms Corinne Fernandez Dietitian Nutritionist. Rule number one is to choose lean cold meats white ham, Grisons meat or defatted sausages and even hard-boiled eggs. “By opting for these foods, we limit the damage while having an interesting protein intake that will calm hunger and prevent abusing the rest”, specifies the specialist. For the tartiflette, we can go to bacon lardons or ham sticks which are less fatty meats.

Side dishes

Then, to reduce the calorie bill, we focus on vegetables. We opt for those in season: broccoli, cauliflower, mushrooms, carrots, cabbage, etc. You can eat them at will with raclette or tartiflette. Grilled like antipasti, grated, with a drop of olive oil and salt, they will provide water and fiber which will compensate for the richness of the rest of the meal. If we add a classic potato or even a sweet potato, we have a totally balanced meal.

No more than 3 slices of raclette

Regarding the cheese which constitutes the base, we play it safe by limiting ourselves to a small quantity. We can innovate with the cancoillotte, a very low-calorie cheese which can easily be melted on a potato.

But if we opt for the classic raclette cheeses, we limit ourselves to two or three slices depending on their sex, age, weight issues. Obviously, we never exceed 3 slices, that’s a big maximum. “There are also low-fat cheeses, but in terms of taste, not sure that we find it. But we do not double the quantities on the pretext that they are less rich in fat. ! “warns Corinne Fernandez.

Tartiflette menu? We also limit the cheese, and we do not refill.

Balance is played out over time

You also have to be careful with the dessert. Clementines are more than enough to complete this type of meal.

For the next meal, go green with lean meat or fish accompanied by vegetables without bread, pasta, rice, legumes or potatoes.

Don’t forget to move!

And in parallel we move! If you are in the mountains, you reserve classic or cross-country skiing sessions, or brisk walking for at least half an hour without stopping. Thanks to all these tips, the tartiflette or the raclette will not leave marks on your figure!
