Elaine Asp runs a popular restaurant in Myrviken in Jämtland. The restaurant has a tradition of serving a lovely Christmas table to all guests at Christmas time and has so far had time for around 170.

Want to reduce the restaurant’s waste
But this year’s Christmas table will be the last that the restaurant serves, which also P4 Jamtland reported on.
Elaine Asp not only works as a restaurateur but also as a farmer and hunter. She shoots and slaughters many of the animals for the Christmas table herself.
But the reason why there won’t be any more Christmas tables is that Elaine Asp wants to reduce the restaurant’s wastage.

Contributes to the biggest gluttony of the year
She also finds it difficult to slaughter the animals that she knows will be food on the Christmas table, because much of the meat is simply thrown away.
– There is both time, care and love behind every animal that grows up. Animals that you do your utmost for on a daily basis, making sure that they have good pastures, fresh water and nice grounds to live on. Then to slaughter them as gently and respectfully as possible so that they become pure, genuine and fantastic raw materials, says Elaine Asp to News24 and continues:
– The fact that these products and raw materials are then put on the Christmas table to contribute to the year’s biggest gluttony for both eyes and stomachs means that a lot of the animals we put so much time and love into are finally scraped off plates and into the bucket for the hens.
Elaine Asp believes that Christmas dinners encourage people to take more than they can eat, despite the fact that you are free to take as many times as you want. Therefore, the restaurant will no longer have a Christmas table.
