There are many different factors that cause cancer. The food we eat is seen as a major risk factor in gastric cancer, which is among the risky cancer types. Foods high in sodium can cause stomach cancer. Populations consuming high amounts of salt were closely scrutinized for their cancer burden. Some of the research that has been done has highlighted a potential association between certain soup-based meals and a higher incidence of disease.

THE RISKS OF SOUP-BASED MEALS EXAMINED

A Korean study published in the journal Nutrients in 2012 evaluated the link between different soup-based meals and the incidence of stomach cancer. The researchers cautioned that the multiple studies evaluating these foods, which contribute high levels of sodium to the diet, and their results were inconsistent. A total of 440 cases and 485 controls were recruited for their research to determine how meals containing noodles, ravioli, soups and stews affect cancer risk.

“In our results, high noodle and dumpling intake was associated with a significantly increased incidence of gastric cancer,” they wrote. The main culprit in these dishes is salt, but another key ingredient is refined carbohydrates, also known as simple or processed carbohydrates, which are basically stripped of their nutrients.

Evidence linking carbohydrates to cancer development in humans is limited, but epidemiological studies have linked starch intake to two types of cancer. “Frequent starch consumption has been associated with a higher incidence of stomach cancer in one case-control study and esophageal cancer in another,” the National Library of Medicine explains.

In initial studies published in the journal Stomach Cancer, researchers set out to evaluate the role of different food groups, as well as broader eating patterns classified as “starchy,” “healthy,” and “mixed.” Their analysis of different food groups showed an increased risk of stomach cancer for rice, salted meat, boiled meat, white bread, potatoes and tubers. “All three dietary patterns generated by factor analysis were significantly associated with gastric cancer risk,” the study leaders wrote.
