Omelet recipe with vegetables – a simple vegetarian lunch

  • Add the chopped tomatoes and fry for another 2-3 minutes until the tomatoes soften.
  • Pour the egg mixture over the vegetables and cook until the omelette begins to set but is still slightly loose on the surface, about 2-3 minutes.
  • Turn the omelette onto a plate and put it back in the frying pan, but then with the unfried side down. Fry for 2-3 minutes.
