The Michelin guide unveiled its 2024 list of starred restaurants in France on Monday March 18 from the city of Tours. The management of the Michelin Guide announced 62 establishments promoted in 2024, compared to 44 in 2023. “It’s a superb selection which demonstrates in quality and quantity the culinary dynamism of France on the world stage, and not just for its achievements,” announced the boss of the red guide Gwendal Poullennec.

In total, France now has 28 three-star restaurants with two new crowned chefs: chef Jérôme Banctel who officiates at the Gabriel, at the Hôtel La Réserve in the 8th arrondissement of Parisas well as the chef Fabien Ferré at the head of La Table du Castellet, a gourmet restaurant in a 5-star hotel in the village of Castellet in the Var. Michelin Guide inspectors, around forty in total, travel across France and Europe to award stars to a restaurant according to five criteria: the quality of the products, the personality of the cuisine (i.e. creativity), the mastery of cooking and flavors, the quality/price ratio as well as the consistency in the quality of the dishes offered. Avant-garde restaurants, traditional inns, remarkable institutions, the selected restaurants all bear witness to the richness of French heritage.

Since 1900, the Michelin guide has listed good restaurants. Originally, the guide was offered to car drivers, it indicated railway stations, post offices, doctors, pharmacists, hotels and restaurants. Historically, the Michelin guide indicated good restaurants for drivers who traveled the roads of France. This is still true: a large number of houses are still located near the national 7, a busy road linking Paris to the South of France.
