It turns out that this vegetable, 94% water-filled, provides a soft texture to your chocolate fondant better than butter, without being recognizable! A small zucchini of about 200 grams, 3 eggs, dark chocolate, sugar, salt, flour and baking powder… Ready to try zucchini chocolate fondant, a healthy cake for 8 people? A pure delight whose recipe we explain step by step below.
- Preheat your oven to 170°C and fmelt 200 grams of dark chocolate in a bain-marie.
- Separate the whites from the three egg yolks. In a bowl, vigorously mix the egg yolks with 100 grams of caster sugar using a whisk.
- Wash, peel and grate the zucchini over the mixture. Mix well in the bowl.
- Add the melted chocolate to the mixture and mix. Then add 70 grams of flour, a pinch of salt and half a sachet of baking powder and mix again.
- Beat the egg whites until stiff in another bowl, then pour into the mixture and mix again.
- Pour everything into a 20 cm mold, buttered or not beforehand according to your choice, and lined with baking paper on the bottom and sides.
- Bake for 30 minutes at 170°C. Wait 5 minutes before unmolding. It’s ready!
