IJsselstein – Two pairs of clogs walk across the grounds of the Windotter mill in IJsselstein, where father and son Dolman run the business together. Even before opening time, a car is parked in the driveway. “Someone wants to buy flour,” Maarten Dolman calls out to his wife Lia, who runs the shop. The shop, which will actually only open half an hour later, is now running almost entirely on self-generated electricity. Because in addition to grinding wheat, the blades of the mill – powered by the wind – also generate electricity from today.
