For 90 years, a Danish factory has produced classic potato flour, but now they want to enter other markets with their potatoes. It is not traditional potatoes that they use, but starch potatoes, from which the protein is extracted.

– You can make plant-based minced meat from potato protein. It’s completely crazy, says Niels Clemmensen.

Potatoes have a significantly lower kilometric footprint than meat. A kilogram of beef emits 280 times more greenhouse emissions than a kilogram of potatoes, writes the World Wide Fund for Nature, WWF on their website.
