Here he cooks over 200 lamb skulls at Gotland’s nation

“Lambskalleqasqen” is Uppsala’s oldest dinner seat with 72 years behind it.

At the only nation that lies on the eastern side of the Fyrisån, the nation of Gotland, 150 guests hungry for lamb gather on Saturday evening.

– It’s a little special when the skulls stare up from the plate. It is not a sitting for the coward, says first curator at the nation Edvin Jämting.

From Gotland to Gotland

The nearly 300 lamb skulls come from a slaughterhouse on Gotland. Noah Ånell, who usually studies Chinese and works at Gothenburg’s nation, has been given the honor of preparing them for the session.

– I mostly thought that I make some money from it, it’s fun and I help my friends at the nation, says the hired chef Noah Ånell.

The shells are first placed in a salt bath, then cooked with, among other things, black and white pepper, salt and bay leaf. Finally, early on Saturday, they are grilled.

– I could have made the host’s best sausage in this pot, but chose to throw in something more macabre – lamb skulls, says Noah Ånell.
