This relative lightness is mainly linked to its ingredients since the flan is mainly made from milk and eggs, much less rich in lipids than butter, the basis of many other desserts. Milk and eggs also provide a valuable source of protein and calcium.

The must, still according to the nutrition expert, “obviously remains fruit tarts”, especially raspberry tarts, which contain “very, very few calories as fruit” and “a lot of fiber”.
