The latest addition is the fine dining restaurant Signum at Hällsnäs Hotel outside Gothenburg. A chef also works at the restaurant Markus Pettersson which has retained its Michelin star for 31 years, writes White guide.
– In recent years, I have mostly been operational and worked behind the scenes, but now Signum will be my base, he tells Whiteguide.

Thomas Sjögren grew up with his parents in Umeå. His parents have no background in the restaurant industry, so cooking is an interest he has found on his own.
– I’ve probably always liked making things and creating things. So there was a lot of baking to begin with. You took everything out of the pantry and then you mixed it in a bowl and then poured it into a muffin tin and then you drove, he told P4 Seven-way 2015.
