This is the new nugget not to be missed in the brand new oriental pastries which take the challenge of revisiting oriental desserts: amlou. This Moroccan spread of Berber origin is a real invitation to regression. It is guaranteed guilt-free thanks to its limited composition around almonds and argan oil. Focus on this product to die for on the occasion of Ramadan which will take place from March 10 to April 9.
Gazelle House
Roasted Beldi almonds, orange blossom honey, pure argan oil and a touch of fleur de sel, and that’s it! Homemade, the amlou from chef Sara Boukhaled of Maison Gazelle is intense in flavor due to the careful sourcing of the almonds. This is the key to preparing this specialty which traditionally makes up Berber breakfasts. The dried fruits were in fact harvested in the High Atlas and deliver a depth of taste that coats the palate all the way to the tip of the tongue. About 18 euros per jar. It will be found at the Galeries Lafayette counter next spring as part of a short-lived collaboration with Maison Gazelle.
Ginko pastry
A Mont Fuji tart with chestnut cream and cranberry confit which celebrates the American and Japanese origins of chef Sayo Yamagata, an Oriental flavor with crispy pistachio, almonds and puffed rice with orange blossom cream and a mandarin marmalade to honor the Moroccan childhood of chef Othman El Ouraoui, but also chocolate bars with matcha or candied yuzu… In the window of the new Ginko pastry shop (Paris 19th) hides a nugget which risks making talk about her: amlou. In a nod to the Moroccan roots borrowed from his father’s side, the young boss prepares an artisanal spread containing 80% almonds and 15% argan oil. So it’s difficult not to dip in again when you’ve started (11 euros a pot)!

In this so-called responsible supermarket, which has duplicated in the four corners of Paris its concept of well-sourced products and paying producers the right price while also offering homemade recipes, the Fooding guide spotted a pot of amlou to designate it as the gem not to be missed! Above all, the delicacy only costs 5.95 euros for 180g. You can find the traditional Moroccan spread alongside a host of good products, including a more usual spread, made with Piedmont hazelnuts.
