Come along to the lab in Älvsbyn – this is where the food of the future is created

CHARM stands for “centre for sustainable attractive resilient food and beverage production”. It is a three-year project where several actors have room for collaboration and innovation.

In addition to the physical food lab, the project also consists of lectures and workshops with cooking. Recently, the first meeting was held where several local entrepreneurs showed up to be inspired and learn about the food of the future.

One of the lecturers was Gustav Johansson, who writes cookbooks and runs Sweden’s largest vegan food site “Jävligt Gott”.

– Sustainable food and Norrland raw materials are in no way opposed to each other. It’s no problem to cook good, sustainable food that tastes good because it has to, he says.

After the lectures, the participants got to try cooking themselves and the interest was great. The public was also welcome to participate. Maja Berggren is project manager.

– This is a very important issue and it is fun to be able to prepare dishes from local ingredients that come from the Älvsby area together with Gustav, she says.

The factory works with three assignments and in addition to networking with entrepreneurs, a physical “food lab” is to be built in Älvsbyn. Finally, knowledge must also be spread about what is actually meant by sustainable food.
