At the moment two Ukrainians work in the service and four in the kitchen. Lena (30) already worked in Kherson in the hospitality industry, Leo (17) followed the chef training in Ukraine. “He fled to the Netherlands on his own and has been working here from day one,” says Mike. “He doesn’t know the language, but if you can read a receipt with an order backwards in a foreign language, you learn very quickly.” As icing on the cake, employee Olejsa is a home baker, she made her last pastry before she fled in the colors yellow and blue.
