Faced with these constraints, the institute against cancer in partnership with Elior, leader in collective catering in France, and Alexandre Bourdas, chef of SaQuaNa **, have decided to join forces to offer a catering offer for patients. in oncology. The idea is to offer recipes with onions in order to give patients back the taste for food. On the menu: traditional inspired cuisine guaranteed “home made” as well as organic products and labeled.

“Beyond the excellence of the care, we seek to bring the best to our patients in terms of service. Because they are weakened and lose their appetite, it is important to offer them good meals to sweeten their stay. “, explains Frédéric Varnier, deputy general manager of Gustave Roussy, in a press release.

The starred chef Alexandre Bourdas appreciates the idea of ​​putting his two cents in patient nutrition by simmering dishes for cancer patients. It is a way for him to bring “comfort, a little joyful and greedy respite” from a difficult daily life. “Bringing a few minutes of pleasure spent feeding on flavors, scents, shared memories, forgotten trips, simply, generously, this is the spirit in which I imagined these everyday recipes”.
