At the end of December, the Environment and Building Administration carried out a regular unannounced food inspection at a pizzeria in Central Sweden.
News24 has taken note of the Food Inspector’s control report and the images and deviations he noted.
During the inspection, a lot of deficiencies and deviations that did not comply with food legislation were revealed. Among other things, the pizzeria was backed down on a remark about the cleaning of the premises, the personal hygiene of the staff and the processing of the pizzeria’s kebabs.

The staff lacked hot water
The various areas of the pizzeria were not clean and this concerns a lack of cleaning of both the preparation area, the dish area, the changing area, the floor, walls and ceiling of the freezer.
The staff also did not have access to hot running water at the time of the inspection. The inspector stated that this made it difficult to clean the food facility in a sufficiently efficient manner.
It is also a law that there must be access to wash your hands with hot running water if you work with food. This means that the legal requirement to maintain good hand hygiene when handling unpackaged food was not met.
“In order for dirt, bacteria and grease to dissolve sufficiently when cleaning hands, cold water and materials for hand washing are not enough, but also hot water needs to be used for dirt, grease and bacteria to dissolve and release from the hands. Both when handling and preparation of various raw materials has been carried out or after staff have had a smoke break, handled cash and mobile phones and made toilet visits,” says the Environmental and Building Administration’s inspection report that Nyheter24 has seen.

The food inspector also noted during the inspection that the pizzeria needed to defrost its freezers, clean the changing room and put away as it was messy and there was disorder in the facility.
The pizzeria also broke the HACCP principles. HACCP stands for Hazard Analysis and Critical Control Points, which stands for hazard analysis and critical control points. It is a model that companies must use and be able to identify risks themselves.
The pizzeria had no thermometer and therefore did not know the temperature of their kebab meat when it was stored in their canteens. When the inspector measured the raw kebab meat on a skewer, it had a temperature of 32 degrees. The kebab in a stainless steel canteen maintained a temperature of 30 degrees.

The kebab stick on the spit therefore did not reach the temperature that kills bacteria and microorganisms. The shredded kebab was not kept warm at a recommended temperature of 60 degrees.
“The board’s inspector states that the company’s handling of kebabs from kebab sticks means that there is a risk of bacteria growing and multiplying in the food. There are no routines or other working methods to verify that the handling of its storage, processing, keeping warm and cooling is carried out in a safe and efficient manner to prevent bacterial growth in the food,” the control report says.

Prohibited from selling kebab meat
Because of the way the pizzeria worked with its kebab meat, they were forbidden to continue selling the meat, as there was a risk of bacteria growing and multiplying in the food. The decision applies until the Environment and Building Administration revokes it.
Nyheter24 has been in contact with the pizzeria about the inspection report and the decision that they are no longer allowed to sell kebab meat from the log. They tell us that the decision has not yet been lifted and that they only serve ready-made kebab meat at the moment.
