The real button mushroom could disappear. Its name has never been registered and therefore applies to any agraricus bisporus, the Latin name for the species, regardless of its origin and especially its production method. In 2024, there are only four quarry operators left in the entire Île-de-France region, around fifty in France, which is now only the fourth largest European producer.
