After a barbecue, forget about overly sweet desserts. Exotic and fresh, this dish will melt your guests!

Barbecue season is here. With friends or family, we enjoy grilled meat or fish to savor during a lunch or dinner under the sun. After the merguez or the beef skewer, often accompanied by potatoes or seasonal vegetables, our bellies are full and we especially want something light to end the meal… Certainly not a pastry, very rich in fat, in this heat! We have found for you the original dessert to end your barbecue in style, on a refreshing note.

This is a simple and effective recipe, on the same theme as the meat or fish skewer on your barbecue. The fruit skewer, of course, but not just any fruit skewer! Head to the West Indies with ingredients such as grated coconut, bananas, oranges, mangoes, pineapple, lime, rum, brown sugar and a dollop of vanilla whipped cream.

First, prepare the fruit (the ingredients are for 10 people). Allow at least one hour before serving. On a cutting board, peel 3 oranges and 3 mangoes using a peeler, and cut them into 3-centimeter-thick cubes. Peel 3 bananas and a pineapple of about a kilo and cut them into pieces. Arrange your prepared fruit in a round bowl-type container, and squeeze the juice of two limes into it.

Next, add sugar and rum! Add 100 grams of brown sugar and two tablespoons of rum to the mixture. Cover and leave to macerate for a good hour. Then thread the pieces of fruit onto wooden skewers, alternating them with fresh mint leaves, for example, depending on your preference. Also, be creative by alternating the flavors. All that’s left is the finishing touch: roll each skewer in 200 grams of grated coconut and you’re done!

All you have to do is arrange your beautiful skewers on a plate that you can also decorate with mint leaves. Keep the dish in the refrigerator covered with aluminum foil. When serving, you can even be more creative by sticking the skewers into the back of a watermelon or melon or by arranging them on a palm leaf, for a guaranteed exotic effect! Take the whipped cream out of the fridge to accompany the skewers as you wish. Your guests will remember this creative and refreshing dessert that will take you on a journey for a long time…
