MICHELIN GUIDE. 627 restaurants are now part of the list of starred restaurants with two new 3 stars, six new two stars and 41 new one stars. Discover the Michelin classification.

[Mis à jour le 22 mars 2022 à 19h24] The Michelin guide unveiled its 2022 winners from the Cognac municipal theater on Tuesday March 22. France now has 32 three-star tables with two new Sacred Chiefs this year : Arnaud Donckele from the Plénitude restaurant at the Cheval Blanc Paris hotel and Dimitri Droisneau at La Villa Madie. The red guide inspectors were impressed by “the delicacy and generosity, the care given to the juices, dressings and sauces” of the Plenitude table. “A high-flying table” where chef Arnaud Donckele “often hits the mark (turbot, sea apple, hazelnut and caviar for the “iodine ode” broth; lamb, pepper, maritime aster for the tidal bore juice)”.

“All the magic of the South – its marine as well as land products, its fish as well as its herbs, wild or not – is tamed at the top in this cuisine” describes the red guide about La Villa Madie.

The Michelin Guide counts in total “627 starred restaurants” in 2022, against 638 in 2021, announced Gwendal Poullennec, the international director of the Michelin guides, during the ceremony to award the stars of the Michelin Guide France. Among the stars, “more than 500” are located in the regions. Find below are the complete 3 star, 2 star and 1 star lists for the 2021 edition, as well as the green star lists.

41 new 1 stars, six new 2 stars and two new 3 stars (the Plénitude restaurant by Arnaud Donckele in Paris and La Villa Madie by chef Dimitri Droisneau) joined the famous gastronomic guide in 2022. The ceremony of March 22, 2022, which was held in Cognac for the first time, also presented specific prizes for service, sommelier, but also new prizes, not to mention the green stars which reward restaurants committed to a sustainable gastronomy.

Chef Victor Mercier, who received a first star, was awarded the distinction of “Jeune Chef 2022” for his cuisine using products exclusively from French agriculture. Aged 31, he is the head of the restaurant FIEF in the 11th arrondissement of Paris, rue de la Folie-Méricourt. A new award, “Chef Mentor 2022” has been awarded to chef Thierry Marx of the restaurant Sur Mesure in the 1st arrondissement of Paris.

To obtain 3 stars, a restaurant must produce “remarkable cuisine, a table that is worth the trip”. Two restaurants won the third star this year: Fullnesson the first floor of the Cheval Blanc Paris hotel by chef Arnaud Donckele and Villa Madie by chef Dimitri Droisneau.

According to the Michelin guide, an establishment that wins two stars offers “excellent cuisine and a table that deserves a detour”. This year 2022, 6 restaurants have received 2 stars in the Michelin Guide:

The 2022 edition of the Michelin France guide is scheduled for sale on Friday March 25, 2022 at a price of 25.90 euros. In 2022, France now has 32 three-star tables with two newly crowned restaurants.

Since 1900, the Michelin guide has listed good restaurants. Originally, the guide was offered to car drivers, it indicated railway stations, post offices, doctors, pharmacists, hotels and restaurants. If at the beginning, the stars indicated the price category of the restaurants, they did not take long to represent the quality of the establishment on the following basis: one star means excellent cuisine in its category, two stars indicate a table that is worth a detour. , and finally, three stars highlight exceptional cuisine, a table that is worth the trip.

Historically, the Michelin guide therefore indicated the best restaurants for drivers who traveled the roads of France. This is still true: a large number of houses are still near the national 7, a very busy road, linking Paris to the South of France. Many of today’s 3 stars are the legacy of ancestral houses taken over by the younger generation, like Maison Pic, Lameloise, Maison Troisgros…

Since its phenomenal success, the red guide is represented in 32 countries such as France, Belgium, the Netherlands, Italy, Germany, Spain, Portugal, Switzerland, the United Kingdom or the Ireland, but also across the Atlantic, in New York or Washington, and in Asia such as Tokyo, with dedicated editions.
