Ingredients:
- 2 zucchini
- 1 onion
- Salt
- Black pepper
- 60g corn flour
- 2 tablespoons wheat flour
- 100ml water
- Olive oil
- Parmesan cheese
Preparation:
Preparation of vegetables : Start by washing the courgettes and onions. Remove the end of the zucchini but keep the skin. Cut the zucchini into thin rounds; it is important that the washers are very thin in order to limit the release of water afterwards. Finely chop the onion.
Preparation of the dough : In a bowl, mix the zucchini, onion, corn flour, wheat flour, water, a pinch of salt and pepper.
Arrangement : Choose a large baking dish and put a sheet of parchment paper on it. Put a little olive oil, pour the mixture of zucchini, onions and dough. Spread well. The layer should not exceed 1cm in thickness to prevent the water from the zucchini from making the whole thing taste unpalatable.
Baking : Add olive oil on top and sprinkle parmesan cheese on top. Bake at 180°C for 35 to 40 minutes. The mixture should be golden brown and crispy.
Tasting : Leave to cool for a few minutes before serving. This recipe can be eaten both hot and warm. It can be accompanied by a green salad for a complete and balanced meal.
