In recent years, Argentina has seen a remarkable increase in vegetarianism as a conscious lifestyle choice. Beef consumption has long been an integral part of the country’s identity, but now something is underway that SVT’s foreign correspondent Tigran Feilers calls a gastronomic revolution.
Restaurants and eateries across the country are wholeheartedly embracing the new trend, and adapting their menus accordingly. Restaurateurs let vegetarian ingredients such as cheese, mushrooms, papaya and fennel shine in the new dishes, without losing the Argentinian barbecue tradition for the sake of it.
– All Argentines have a relationship with grilled food. But in the past it was not so common to grill vegetables. This was hardly conceivable ten years ago, says restaurant owner Leonel Chajud.
