Consumed for several millennia, lentils rank among the most digestible legumes. Their outer envelope in particular contains antioxidants of the family of flavonoids. They are also particularly rich in fiber. And they are excellent sources of minerals and D’trace elements — phosphorus, iron, manganese and copper principally. Finally, they contain some vitamins essential for the proper functioning of our body like those of group B.
The consumption of lentils is therefore recommended as part of a vegetarian diet. Because like all legumes, they are full of protein — which must however be supplemented by a contribution of cereal products. Contact lenses should also help us reduce our rate of bad cholesterol and contribute to the prevention from cardiovascular illnesses. All while giving us a feeling of satiety rather quickly. Lentils are also beneficial for the health of our teeth and bones, the proper functioning of our nervous system and a healing of our wounds.
You should also know that the lentil – and more precisely the green lentil from Le Puy – is the first pulse to have benefited from an AOC in France. It was in 1996.
