Indian cauliflower curry
Recipe from Chloe Vasselin’s blog
- Preparation : 5 minutes

Ingredients
1 cauliflower/ 2 medium potatoes/ 2-3 tomatoes/ 1 onion/ 2 garlic cloves/ 1 heaped teaspoon of ginger paste/ 7 or 8 black peppercorns/ 1 heaped teaspoon of seeds cumin/ 1 teaspoon coriander powder/ 1 teaspoon turmeric powder/ 1 teaspoon chilli powder or 1 chopped bird’s eye chili/ 2 tablespoons vegetable oil/ A few fresh coriander leaves/ Salt
Recipe :
- Cut the potatoes into bite-size pieces and the cauliflower a little larger, so that it doesn’t disintegrate during cooking and remains in pieces.
- In a large saucepan, heat the cauliflower and potatoes in hot water for 10 minutes. Take them out and drain them.
- Cut the onion, crush the garlic and chop the coriander.
- Heat a skillet with two tablespoons of vegetable oil. Add the cumin seeds and black peppercorns.
- Add the onion and stir until translucent.
- Add the ginger paste, garlic and chilli, sauté for a minute.
- Keep the heat low and add the coriander powder, the turmeric and then the tomatoes to the pan. Keep stirring until you get a paste.
- Gently throw the potatoes and cauliflower pieces into the pan and stir gently so that the batter adheres to the vegetables.
- Leave on low heat for 5 minutes and sauté the vegetables, stirring occasionally.
- Add salt and leave for another 3 to 5 minutes, covered.
- Taste the cauliflower, it should still be a bit crunchy.
- Arrange the plates with chopped coriander and serve with roti/chapati.
