With its 95% water, the cucumber is one of vegetables thirst-quenching summer. From starter to main course, it brings freshness and crunch. Here are five fresh recipes to try:

Cucumber gazpacho

This type of dish can be drunk at any time of the day. To prepare it:

  • peel a cucumber, cut it into pieces and put it in the blender;
  • add some leaves mint ;
  • complete with the juice of half alemon and a tablespoon of olive oil;
  • season with salt and pepper;
  • start the blender until you get a very smooth gazpacho;
  • place the blender in fridge for a good hour;
  • serve the cold gazpacho in small cups with a slice of cucumber or a mint leaf decoration.

This recipe can also be called frozen soup or frozen cucumber velouté.

Cucumber carpaccio

Simple and very refreshing, this recipe will only take you a few minutes:

  • peel or not the cucumber and cut it into thin slices;
  • have it disgorged or not according to your desires;

  • mix the two juices then add the same amount of still or sparkling water;
  • add a spoonful of powdered sugar;
  • stir everything and leave it in the refrigerator for an hour or add ice cubes.
  • serve the drink with small mint leaves.

For a smoother juice, place the cucumber, lemon juice, sugar and mint leaves in a blender then pour it directly into glasses to be placed in the refrigerator.

Aperitif cucumber rolls

Quick and simple, here is a recipe that will be successful during aperitifs:

  • finely cut cucumber strips lengthwise with a peeler;
  • spread one side of the strips with a parsley cheese;
  • roll the strips;
  • to maintain them, prick a stick;
  • put them in the fridge and take them out just before serving them.
